If there is a Tapa that affords the title of comfort food then it has to be Croquetas. Most people in homes across Spain will have their own recipe and every tapas bar and Spanish restaurant will have them on the menu. Croquetas de Jamón are the most popular across Spain and are served as a tapa, or for a light lunch or a larger portion for dinner with a fresh salad. Croquetas de Jamón may well be the dish that is most common but it is by no means the only one, and where does this delicious tapa originate from...
Sadly this is one dish that Spain cannot claim as its own. Monsieur Escoffier was a French chef and culinary writer who worked in the kitchens of establishments such as the Savoy in London and the Ritz in Monte Carlo. Known as the "King of Chefs and Chef of Kings," he wrote and developed recipes that were incomparable to anything ever created before including the first recorded recipe of the the croqueta, or croquette which originated in France in 1898. The recipe soon spread as chefs who worked under Monsieur Escoffier travelled to work in different kitchens across Europe and cultural influences began to influence the original beef croquette recipe as chefs incorporated local and traditional ingredients into the recipes to accommodate cultural tastes, hence the Spanish favourite Croquetas de jamón ibérico.
Amongst our favourite Croquetas though here at Eat Play Stay Spain is Croquetas De Bacalao translated to Cod Croquetas. Try this recipe to add to your Tapas banquet... Serve with a drizzle of honey and the taste sensation on the palate is exquisite...
Croquetas De Bacalao
9 oz (250 g) potatoes, peeled and diced
1 lb (450 g) salt cod
2 big garlic cloves, finely diced
Handful of fresh chives and parsley
5 tbsp panko or breadcrumbs
